yes, the whole movie about the rise of a galactic empire should take place on a single planet or as few as planets as possible. it makes no narrative or aesthetic sense to maximize the number of planets showcased to demonstrate the width and berth of the galactic scale of the story or anything. showing tattoonine as lawless and fringe. we didnt need the whole narrative explaining where anakin's pain that leads to him becoming darth vader came from. it would have been much better if it all happened off screen, like in disney nu wars kylo ren!!!! also remember how cool it was when we just meet Rey and she just somehow lives alone by herself but is also good at everything like swimming and flying space ships and stuff. much better than if they had given either of the two main characters any depth or character development!!!!
seeing darth vader as a 'cute innocent little kid' who loves his mom and loves helping strangers was entirely the point. if the character just started off as an angsty spoiled teenage jedi knight the character would have been a failure - again like kylo ren. child anakin was absolutely essential to what the story as george lucas wanted to tell it.

The whole narrative point was just to show how pure Anakin was. The same could have been done by showing him as a good, naive and absolutely honorable young Jedi Knight like Steve Rogers.
The Kid was a choice by Lucas because he wanted to direct the film to children, and it is not excluded that it was initially older given the age difference with the queen which makes everything morbid and creepy.
