Most hiring processes have been demonstrated to be worse than pure chance for securing competent employees. There's really no good way to actually vet people in advance.

That's my point, that interviewing well and being able to actually show up and do the work are two wildly different skillsets. For something like barista work where your ability to make small talk and interface with random people is a core competency it's more germane, but lots of people interview poorly but work well and vice versa.
