Someone is going around removing all the men from the fairy tale kingdom. Telling the stories without them.
Fiona and Dragon want their happily ever after because without Shrek and Donkey their lives aren't happy no matter how 'insert villain' here insists on it.
I would have the villains be a man hating Troll and a Woman hating Pixie working togeather.
It would be revealed that the same story is going on elsewhere but of course in reverse someone removing all the female characters from the stories.
Although most of the cutaways toward 'Shreks side' would be commentary. Jokes like...doesn't it feel like we've done this already? and how it all feels hollow or something. I would totally have jokes like the 'empty bachelor pad'
I'd basically go for an overall message that yeah despite the bullshit of the other sex we do kind of push each other to be better than we are without each other.

I guess the best way I can explain it is like, there’s one early Family Guy episode where Peter loses his sex drive and Lois starts boredom eating. She gains some weight and Peter shits on her for it, but then they have fat sex and they enjoy it so much he starts over feeding her like some proto mukbang
forcefeeding is not an interest of mine either, but I sort of relate to Peter in that weird “normally I wouldn’t be into it but yet with you…” thing

In either the main timeline or the forever after one they start a support group for other misunderstood fairly tale characters and help them find ways to achieve their happily ever after on their own terms. Sort of like happily n’ever after
For the forever after one turns out even after the kiss the universe still remained albeit without rumple in power.

Shrek, Donkey and Puss go on some weird off-screen adventure to save the kingdom or whatever. Meanwhile someone kidnaps the children, so it's up to the ladies to track them down. Maybe Rapunzel could be the main villain, wanting to get revenge on Shrek and co. for ruining her chances of becoming a queen.
