Do we know who the "last" airbender was, besides Aang? I'd be surprised if a few of the older nomads weren't just locked away until death, since they obviously couldn't be the avatar.
My guess it was more like the airbender culture died and by proxy, the art of airbending in general. kind of like how israelites would reject their faith to live in Germany to the point they had little to no ties.

You do realize they hunted down the survivors over the course of 100 years, right? There's even a comic that shows one of the tactics they used, which was luring survivors to an air nomad "safe house" filled with relics only to capture and kill them.
