I watched the first 7 seasons about 12 years ago and want to watch the rest. Does anyone have any good youtube season summary videos I can watch to get caught back up? I COULD start watching where I left off but I dont think I would remember everything going on.

No, it really fricking doesn't. It has the same problem that Gotham does in that it gives up on its own premise (young Clark) after a few seasons and becomes a weird-ass Superman fanfiction in the style of Beverly Hills 90210 much like how Gotham went off the fricking rails and not in a good way. And it became more and more leveraged towards the teenage girl demographic as it went on to the extent that every season past 4 is borderline unwatchable save for a couple of episodes here and there. And goddamn is Tom Welling the most wooden actor to play Superman in live-action history, especially in later seasons he very obviously does not give a shit.
I get that its the 2020s and zoomers and alpha-zoomers have been fed so much garbage over the past decade that even crap from the 2010s looks comfy but that doesn't make it any less crap.
