Either way once the guy goes to get the wine, he downs his wine as if getting himself ready to do something because he's "switching back" to revenge mode.
The other interpretation is that he just genuinely had a moment of enjoyment and realised a few seconds later that he's on a mission and it overtook his whole life again.
Gus was celebrating defeating Lalo. It was the first time in a long time he felt like he could relax. He was so relaxed, that he went full gay for the wine guy. But then Gus realised that he can never relax as long as the cartel lives. He could never go full gay as long as they continue to exist. Basically, Gus is obsessed with revenge.
