Conquering an otherwise largely innocent and irrelevant hold would make Robb seem like he was just out to conquer Westeros. He didn't hate the people of Casterly Rock, and likely didn't have any real disdain for the Lannister extended family. He wasn't out to genocide their name from history like Robert or Tywin.
