Even the guy who wrote the comics said that Zuko and Mai eventually get back together, and Izumi is the japanese word for "fountain", which is how they first met so she's obviously their daughter.
Zuko kissed Jin by a fountain. I guess fountains are lucky for him.
Still, I doubt he'd even remember her name by the time of the end of the series, let alone fall in love and wed her (and that's ignoring the fact she's a peasant girl from another nation)

It's Mai and any other take is just cope and denial. That's just how children show writing works. Everyone who was paired up by the end of any cartoon/anime is with that person as endgame.

I'm stating the facts
At the end of the series, Zuko and Mai are together, and if the upcoming movie (smartly) is written as if the only thing people familiar with are the original series and maybe Korra, then they'll still be together
Izumi's name and design point towards her being Mai's
Yang, the guy who stupidly broke them up in the first place, has literally said he intends on them getting back together
Anything else would retroactively ruin the climax to the boiling rock
And she's the only option that makes sense:
A random FN noble girl would be unsatisfying
Katara and Suki are taken
We know who Toph's kids are
They'll never allow the incest route and any belief that they'll even consider it is delusional (yes I admit I can buy into Azula having some sort of complex, but the idea that it's reciprocated is laughable since, at best, Zuko only pitties her at the end)
Ty Lee is a maybe but again, randomly pairing them together would be unsatisfying narratively and there's general consensus that she's Pema's mom (or at least in some way related)
Jin and other one-off girls are off the table for fairly obvious reasons
