the writers needed an asspull twist for shock value because they know their audience. if they had them just beat cersei or have her win instead, the blowback would have been even worse. they basically wrote themselves into a corner with how the solved the night king plotline.
I'm pretty sure Dany going crazy and being killed by Jon or someone else is GRRM's plan, he told dumb and dumber his planned key plot points so they can finish the show. It would be extremely unlikely they would completely change the ending. They just did a piss poor job because they went against GRRM's suggestion and rushed the show because they wanted to move on, even though George said it needed a few more seasons.

These new directors dont understand the moneyshot finale will give the audience rewatchability factor, this is why breaking bad or sopranos will always be superior because the finale follows a progression, it makes sense. Dany getting more unhinged was extremely slow building over the course of the show, then just went off the rails in the last season because the israelites had to wrap it up and run off to Star Wars. Good chances are the israelites had no idea what the bells meant and didn't care
