If you are talking about Star Wars never having existed beforehand it wouldn't get made. Not being based on an existing property it would be considered too much of a risk, and the absence of Star Wars before means there is no argument to sell it as 'this can be the next Star Wars'. If you are talking about a remake you already know the answers: race-swap Luke or Hand, shift greater importance upon Leia, shit CGI etc. etc.

Remaking it, in theory, isn't a bad idea. But the things you listed are why it would suck. A faithful remake can't exist but if it did I honestly wouldn't mind. There's no reason they can't just do like a Bond thing and remake it ground up.
