      Because the Republic was actually shit. It was corrupt, inefficient, favoured the core worlds and had let corporations go beyond the state. The Empire was stable, protected worlds from pirates, nationalised stuff like the Trade Federation and Techno Union and employed loads of people.

          It was in self defence. Alderaan was a state sponsor of terrorism. If the empire didn't take them out they would have hampered imperial efforts against the rebellion internally much like how the Radical Whigs made every effort to undermine the British govnemnt during the Revolutionary war.

    Most people who joined the Empire did so under the belief that they were protecting people, planets and galaxy, against crime of all types. Much like how the 3rd riech was so popular before 1943, as many people in the early days believed Germany was liberating them from Crime oppression.

    I don't know on what website I read this, but there was a theory that the New Republic is an allegory for the current US and the First Order is Russia, despite the Nazi imagery. That's why there were so many female libs who are fans of the First Order between TFA and TLJ, because they thought it would be later revealed that Kylo Ren and Hux were actually the good guys.

    The Republic maintained the status quo whereby some people are successful and others are not. The Empire appealed to people's fear of becoming the ones who are not. Many such cases.

    Republic bad, empire worse.
    The Republic was corrupt and incompetent in its final days, but there were mechanisms for reform. The Empire runs on mechanized brutality, and there are no conventional ways to reform it beyond killing the Emperor himself. Also, in universe a lot of people would see the Empire as a continuity of the Republic, a more efficient form of government created in the wake of a brutal civil war with the goal of ensuring anarchy never reigns again. A lot of people are down for that in the abstract, until storm Troopers start going house to house arresting people.
