I would say that he isn't "fricking boring" and he is already "cool and relatable" but If I HAD to change something it would be to make the whole "Alien refugee" origins much more subtle, (almost 'never figures out he is even an alien' subtle). and Probably tone down the super power so he would be more 'man' than 'super'.

The core of Superman is that he is a nice guy, but either the public or the writers don't know how a nice guy acts or feel unconfortable around an all around nice person as Clark and then transform him into someone naive or square almost going for totalitarian to make him interesting.
Main problem is that people mistake being nice for being a doormat. You don't need to take every punch people throw at you not to hurt their fee-fees.
A good example is any time writers have a scene of Batman owning him in a conversation trying to make Bruce look like a badass. There's so many obvious comebacks and easy ways to point out how he is full of shit but then they write Superman just standing there, like if Bruce had told him some incredible, impossible to disagree with truth.
You can be nice and understanding while still have a clear line of respect that others shouldn't cross. I don't want to start shit about it, but take a look at Tanjirou from Demon Slayer. He is an extremely nice person, impossibly so, but even he puts limits on others and actually enforces those limits when they cross a certain line.
That's what they should do with Superman. He is a nice person, a kind man at heart, but being kind does not mean you have to let people walk all over you.
The best way to write Superman is to focus on other characters around him. Supes will always be boring with his nigh invincibility, but his ability to inspire those around him is when Supes really shines.

He doesn't need to be cool. He is relatable. Superman is friendly, but Clark can often feel lonely or uncomfortable. You fixate on his powers so that makes him unrelatable to you, but if that is the standard, no superhumans are relatable by that logic. With his powers, he could do damn near anything, but in most cases he just uses them to help people. Whether he is in costume or out of it, he does he makes the choice to do what he can to enrich the lives of those around him, and not be a dick. If that isn't relatable, that isn't a Superman problem. That's a you problem.

Superman isn't boring at all for the format he exists in. He's for weekly, zany comic books where weird nonsense happens.
He's only "boring" when you try to put him in a more serious environment with stakes...and even then, a good writer can very easily make many good stories out of that character. Villains exist to test him, side characters exist to contrast him, you can have him remember his childhood problems, you can make him a father and discuss the pressures of having something not invulnerable to worry about. He still has to worry about losing his friends, his home, his mortality, the constant struggle of abiding by "weaker" people especially when it comes to laws or ideas he can't agree with, his identity, the way others rely on him. The knowledge he'll never see his parents or homeworld. He's really not invincible at all - when you look at him fully, you don't even need Kryptonite.
Mob Psycho is a manga that has the character be essentially unbeatable, but the stakes and tensions relate to the protagonist and whether he can achieve his very simple ambitions.
Just don't be a shit writer and you can make great Superman stories.
