Kamille has seen enough fighting. And I'll be honest, I have my doubts as to whether or not he actually fully recovered. The Dublin colony drop fricked with Kamille so much that it was causing him physical pain and discomfort even before it happened, and his subconscious thoughts/feelings about it were so strong and overruling of his condition that he literally non-stop sprinted across half of Scotland until he collapsed. Sure the last time we see him he's running with Fa across the beach all happy, but given how there's wars or just events of general mass death every other year in the UC timeline I can imagine him constantly relapsing. And given how bad the deaths of people he doesn't even know affects him, I can't imagine what it would be like for him if he had to join some nu-Argama, get to know its crew and then watch them die (again).

yeah this is my true grasp on it while expanded story makes him a doctor which is why I specified humanitarian. Why the frick would Kamille of all characters get such an education just to sit around in a hospital vs providing care to war torn colonies
Amuro and Char's understanding is that he's still "crazy" during the events of CCA in the novel(s) and if he was all there at that time he'd both have a frick ton to say to Char and give the man a feeling most complicated upon seeing him in good health

I imagine that even after Kamillle has mostly recovered he would still need Fa constantly around to act as his personal wrangler, and that in order to try and keep him from relapsing Fa basically just kites him away any time it might look like there'll be a battle or whatever nearby. Also, I know that in Moon Gundam he makes a cameo as a doctor, but I don't personally see Kamille doing that. If anything I can imagine Kamille ending up like Kelly Layzner, picking through junk and salvaging mobile suits while Fa stays with him to prevent him from suddenly losing his wits and getting dragged into another war (willingly or unwillingly). I could see Fa becoming a doctor though, or at least taking on nursing officially as a job. After all, she spent an entire year caring for Kamille.
Also, even though there is nothing to support something like this ever happening, I'd also throw a Ple clone at Kamille for him to take care of. Ple Four specifically.

As for the sketches, do you remember if he made any comments about it when he posted it? Looking through his twitter most of the stuff he posts looks like they're eicther concept drawings or design studies, so I'm curious if this design was ever intended to actually be anything.

isn't that in Moon Crisis actually? IIRC it's a manga from the 90s that's in an alternate UC continuity so the whole thing doesn't really mean much
Yeah that's my bad, I meant to say Moon Crisis but it and Moon Gundam blended together in my head and the latter came out on top.
And it's fair to point out that Moon Crisis isn't canon to the main UC, but I don't think the average person realizes that it isn't canon and instead usually just goes "Guess that's what happened to Kamille" and accepts it.

given nothing else has bothered to ever mention him except for one line Hi-Streamer, I can't really blame people for that. I get Tomino never wanted to do anything more with him other than New Translation, but it's downright weird nobody else has either. Makes me wonder if there's a reason for that.

It probably comes down to the simple fact that, realistically, Kamille would probably never directly get involved in fighting ever again, and that because the majority of people who do want to see him return probably want to see him fight no one will ever bother creating dedicated media with Kamille doing anything but that. In which case the only three options to have more Kamille content would be:
1. Setting a substory within Zeta's timeframe
2. Alternate UC timeline
3. Handwave it
The first is the easiest to be done, as UC Engage already has Kamille make a brief indirect cameo by having a fight between Peche and the Zeta after Rosamia is killed.
The second could also be done since there's already several alternate UC timelines like Origin, CDA + ZDefine and Thunderbolt, however the only problem with that is there are some people who already confuse these with the main UC.
The third is probably the least likely to be done, since having Kamille doing any fighting post-ZZ, without any explanation, is basically timeline shattering because of the repercussions it would have on other characters
Another factor you could probably point to is the fact that, compared to people like Judau or Char, Kamille's future was left semi-vague. Judau we know explicitly went to Jupiter, and while not told exactly why or what he was doing it still left a box for authors to work inside. With Char we were already told that he was starting to cause rumbles in the colonies as part of the setup for CCA, something that also sets up Amuro despite the fact that he's not even in ZZ due to the simple fact that the two of them are closely associated. Kamille meanwhile is last seen running happy on a beach with no dialogue or any comment about him, so his situation is almost completely left up to personal interpretation.

Backstory revealed through flashbacks: Kamille was abducted by Char and made to dual-pilot the Alpha Azieru with Quess. Hathaway saved both Kamille and Quess from the mobile armor before it exploded. Bright knows that Kamille is gradually recovering on Earth, but he's pulled strings to make sure that Kamille's psychiatrist never reports that to the Federation government, so he won't be (1) given Amuro's "caged bird" treatment or (2) assassinated.
