That's completely fine. The talent that is necessary to make the really good shows comes from picking out the good creators from the endless churned slop and elevating them. You gotta let creators create slop if you want them to create kino, behind every single artist in existence is a long forgotten but gigantic gallery of absolutely terrible art.
Purging all of your slop and lesser projects to go for blockbusters also purges your talent pool, which is what Disney did to ruin themselves, among many many other things.

I started watching the very first series from the 80s with fresh eyes and its actually still pretty fun, I'm looking forward to seeing how it changes over the years.
Start from the beginning. The original show is great, although the animation can be quite rough. If 52 episodes is too much of a commitment, you can watch the compilation movies instead. Then just watch in order, skipping the stuff that you don't like. Tomino's works are the most important, but he's a based moron and occasionally puts out some real slop (Double Zeta).
Gundam '79 is actually kino. Amuro Ray is a GOAT character. Zeta Gundam (direct sequel to 79) is a huge visual and audio upgrade but the story is a little shaky. I watched Double Zeta (sequel to zeta) and I regret it - try it out but if you're not feeling it just read a synopsis. After that is the movie.
Zeta I wouldn't call shaky, just poorly paced. You're so used to the filler episodes when shit finally hits the fan in the Gryps conflict it's almost entirely over. Amuro and Kamille are the GOATs
I dislike most Japanese stuff, but I have to admit that at least that they're willing to experiment with new ideas, not lose sight in entertaining people, and not trying to spread pozzed shit like US companies do.

Only Kamille really suffers. There is never any moment which portrays them as being worse off than if they had never started fighting in the first place. "Muh Newtypes muh weighed down by Earth's gravity muh Oedipus" is pretty much the only "deep" philosophical themes in the first Tomino Gundam series.
