It's probably a fruit flavor to round out Strawberry as the singular fruit flavor. Since it's yellow it's probably something like Mango. Personally I thought Butterscotch was the more appropriate choice

A yellow fruit that serves as some kind of compliment to strawberry in the same way that vanilla compliments chocolate. It's literally stated in-show to taste close to blurpleberry, and that makes me think it's some kind of a stronger fruit flavor to compliment the relative lightness of strawberry. So probably mango or a yellow variety of guava. Banana seems too light in comparison to strawberry to "round out" the flavors.
I still lean towards it being a fruit flavor as that leads to a balance alongside the existing three flavors(Strawberry being another fruit and Chocolate & Vanilla both being flavors derived from beans), as for what fruit that is, my assumption is that it has to be a Yellow fruit to match the color, I'd say the best candidates would be Banana(an iconic ice cream topping but surprisingly rare as a flavor), Pineapple(much the same as banana), or maybe Lemon(was apparently a very popular flavor for ice cream back in the 19th century and beginning of the 20th before mostly vanishing)

KND is one of the rare cartoons that still holds up upon rewatch as an adult. I am disappointed G:KND was never greenlit, but I feel like that the show ended at a good place even if they were teasing for more.
Highly unlikely with the current state of CN and WB. Warburton wanted to bring it back with that GKND spin-off/sequel a few years ago but it was probably rejected along that Billy and Mandy movie.
