If any of them did gain some level of intelligence, I'd call that a fluke.
They seem to have gained intelligence some 25 years later but all droid seem to develop full-fledged intelligence after a decade or so of no wipes.
Part of their poor design is their sapience. Maybe the biggest flaw in their design.

I don't get the point of slavery in Star Wars when the droids can do basically anything a human/alien can and won't ever try to rebel.

Droids have SHIT mobility that human slaves easily overcome in 99% of environments and if you do spring for a droid that can at least match a human it's probably cheaper just to keep a human around

Droids need repair parts and oil baths i guess, humans you just chuck'em some food and a pickaxe and they can work for a pretty long time.
