I don't remember the movie, do they explain why he's immortal?
Some people are just genetically predisposed to being immortal but you have to be non-critically wounded first. If your head comes off you die but if you are stabbed through the neck for instance as in his case you get better and you become immortal. It is random chance who has the potential to be immortal and it is never explained really how they can find each other. The Kurgan and Egyptian found him but it’s never really explained how.
Why can there only be one?
It was foretold that all the immortals would have a showdown in the US some time in the 20th century and the last one remaining would have their choice of powers gifted by the gods. They could have the option of ruling the earth (what Kugran would’ve chosen had he won) or installing world peace and becoming mortal so they can sire a family and finally die (what Connor chose).
They really made sure this movie couldn't have sequels without it making no sense.
