They just kinda forgot about it. They didn't even mention Farmworld Finn's fate when the Farmworld kids came in the finale. Well yeah. She's not drawn as fat, that isn't how fat people look. It's not a realistic style. Why are Simon's ankles the same thickness as his thighs? Where are their noses? How do Cake's legs support her body?
It can, and that isn't it. She's in the same range as Simon, in the opposite direction. Not a good way to portray a character meant to be fat.

In her original episode she was still thicker than Simon is now. If I had to guess from what I've seen they gate her fatty curves then for the gender swap - they couldn't take muscles away instead because Finn was already a stick figure - and afterwards copied from the most recent models instead of the originals so she got thicker and thicker.
