    Why wouldn't the chef realize he can use a standard measuring cup of blueberries per muffin, which he should have been doing already? Henry really hired some bad people.

      Well you see a batch of muffin batter isn't made muffin by muffin, it's made for say 100 muffins all at once. So when the blueberries are added natural randomization and imperfect mixing of the batter may cause clustering of blueberries in some parts of the better, before it is scooped out into individual muffin sized portions in the baking tray. This will mean some muffins may have very few blueberries.

      I mean you can spend a long time mixing the blueberries into the muffin batter but statistically speaking you will seldom be able to achieve perfect blueberry per muffin parity 100% of the time.

                Didn't he tell the chef he didn't care about that and to just get it done? Sounds like he understood what it would entail but didn't want to be embarrassed by a guest finding what he did. Mixing in the berries once the batter is poured is silly but when the owner says all muffins must be equal that's what you gotta do.

    I don't get why this was such a big deal. The muffin mix I'm assuming is poured into trays, right? Probably huge trays, but trays none the less. I couldn't be that difficult to have a cup of blue berries next to the tray and if you notice one is all batter, then drop a couple in.

    I think people exaggerate the 'equal amount,' when in reality he just wants a decent amount in each one. Don't have to count them all, but just if you notice one's a little light, drop a few in. With the amount of cash that place was making, the chefs probably weren't making pennies there. There really isn't much of an excuse for a blue berry muffin with no blue berries. Chef was just lazy or didn't have a good system that ensures quality.

    Easiest resolution for the chef is to premake the batter and freeze it in muffin cups. Then when preparing the muffins for service cut the frozen batter in 2 and scoop a measured amount of blueberries in. Then as the mixture thaws mix it and bake.

    The difference between a frozen the day before batter and a fresh batter is basically nothing.

    It just showed Sam was a bad manager. The problem was not enough blueberries in the muffins. So instead of saying that and telling the chef to fix it, and letting the chef come up with a solution, he came up with his own non-chef solution and imposed it on the chef.
