The little cylinder on top of the second one was never in the movies. That was a weird addition for the lightsaber made for ROTS. For a while Kenobi was suppose to have his prequel lightsaber with him than loose it during the movie, maybe on Utapau. There's a still image of McGregor in Padme's aparment with that hilt.

The prop used in AOTC was the resin prop, cause McGregor hated how heavy the hero prop in TPM was when hanging from his belt.

The TPM and AotC prop is pretty much identical to what he had in the OWK flashback. Anakin has his AotC one that gets wrecked in the battle droid factory.

Some designs have the opening, some don't. Obi-Wan's prequel saber doesn't. Probably cause it was custom made, not assembled from hand grenades and faucet knobs.

The actual answer is that the ones with the open detailed emitters were used for close-ups and for hanging on their belts. The ones with the pinholes were the stunt sabers that could attach the fiberglass sticks for dueling. The stunt sabers were never used onscreen when they weren't ignited like in the OP pic.
