They work hard, the studio (director, producer, executive, some moron who simply wants to flex their nuts and act like they've made a major contribution to the film) demands work get scrapped/changed, and the VFX studio boss is too much of a coward to say "no" because they'll get the whole VFX studio blacklisted, and now YOU, the VFX worker, have to cancel your plans and stay late to keep working.
It's the design by comitee problem in any "creative" work.
The client will see the v1, v2 or whatever and then every frick in the room says what they want changed even if they're clueless to the overall process and the ramifications it will have which nearly always results in a worse product.
