It's the same reason people jerk off over the Krakoa era of X-men. So many bland or forgettable Hulk stories, along with a history of being jerked around by the rest of Marvel, and suddenly a book that goes back to actually treating Hulk like the proper threat he is was enough to get people to immediately go all in with it. It's still some of the better material the Hulk had in a long time, but considering its modern day competition is Space Hulk that is setting the bar super damn low.

The thing is, Immortal Hulk came out when Hulk was getting very little content. The last thing that happened with Bruce IIRC is getting killed in civil war 2, which was a steaming pile of fricking shit. I can't really remember any sort of Hulk comics, infact, I think that She-Hulk kinda became "Hulk", because I remember around that time there was a comic of She-Hulk post-Civil War 2 where she was a Grey Hulk version of herself.
So yeah, overall, Hulk fans were fricking starving for content, and Immortal Hulk gave it to them. It was also something pretty remarkably different from previous Hulk stories. Hulk being a monster was one thing, but it dived into the mystery of the Hulk's powers itself and gamma radiation.
