In the book Watto makes Anakin ferry parts between Mos Eisley and to Watto's friend Grung Horgart in the city of Bestine. One day Anakin comes upon the droid pieces which would eventually be C3P0. Anakin wanted to keep them but Grung wouldn't let him keep them. In response Anakin used the force for the first time and accidentally used a jedi mind trick on Grung.
Well C3PO is a consumer model droid, of a type that exists all over that universe. so it's clear when they say Anakin "built" him, it means he assembled him, not that he invented him.

1. Anakin is a preexisting character who we already know is important.
2. In-universe, building C3PO isn't a big deal and we don't really know or care how much his piloting actually helped. This stuff is just a side story and it's too noisy to make heads or tails of it. It's cringe, but it's not a big deal. It's not like Obi-Wan and Yoda were on the surface celebrating, shouting Anakin's name.
3. Having competent characters predict a child will one day be awesome then showing him be awesome is not bad writing. Having a character just be awesome for no reason, one-upping preexisting awesome characters, is.
4. Virgin birth is cringe, but secretly having demigod lineage is worse, because one at least establishes themselves as a completely new character instead of riding the coattails of older ones.

Anakin is meant to be a reflection of Luke, so while Luke starts out dumb and useless and then rises up, Anakin starts out with everything and then degrades into a coward and a villain, which precludes him from being a Mary Sue by default.
Rey is just Mrs. perfect from day one and the attempts at presenting her as "flawed" are pathetic.
