None of what you're complaining about happened in the movie though. She was shown as being much weaker than Thor pretty clearly and was not better than him at anything really. She was essentially his sidekick. That being said, Thor was a buffoon the entire movie, but Jane wasn't the one who knocked him down a peg, the script did.
The problem with Thor is not his power level and they don't even show Jane to be stronger, it's that he has been a comedic relief character since Ragnarok. It was fine for a while, but IW was an example that he can clearly carry a dramatic story and then they just turn him into a joke in EG. L&T is very much a sequel to the Thor in EG and not to the Thor in IW.
This moment isn't really that bad with more context. Early in the movie Jane is worried about not having any good one liners like superheroes do and the best one she could come up with was "Eat my hammer", which was terrible, but Thor didn't want to hurt her feelings and said that it was "great". Then when she says it at the end, it wasn't supposed to be a badass moment for her, but a funny moment because she still couldn't come up with anything better than that shitty one.
