They started getting BTFO really badly once the Eastern Europeans started making more stone castles. The Western Europeans already had them, so the Mongolians never would've been able to take part of it over in the first place.
This and at the time the eastern europeans were still mostly tribal pagan communities. The crusades into the baltics and the rest of eastern europe didn't happen until the mid 1200's so there were still no real nation states and very few established fortresses. But they were able to build up pretty quickly once they got hit by the mongolians who mostly used local tribes for the bulk of their forces.
