During the middle ages, keeps had a very limited settlement around them, unlike palaces that were near or inside towns.

I don't remember for sure but it seems like in the book winterfell had cool Theodosian style walls and a settlement outside the walls that actually made it feel like an important place.

there was definitely a Wintertown accompanying Winterfell

That's what it was. I recall theon having to go out of his way to outlying villages to find bed warmers since wintertown had dismantled. Since the contrast between the first book's description of winterfell and what the ironborn take is worlds different.

Why do fantasy shows and movies never show all the farmland surrounding cities? I can kind of forgive the LotR trilogy because of the already massive budgets and CGI and composite imagery still being relatively young, but nothing past 2010 can hide behind that excuse

Why did the army of the dead go out of their way to stop at this rinky dink little shithole? Even if they wanted to face the army of the living they could have marched past winterfell and made the army of the living pursue them, destroying any food stores along the way south from Winterfell. A long march in winter with that large of an army and only whatever dwindling supply of food they could carry with them would have decimated their forces, not to mention they probably couldn't bring those trebuchets with them and they couldn't possible keep pace with the army of the dead which doesn't need to sleep and can do fine in the blackness of the night.

      >A long march in winter

you’re forgetting that the characters all could teleport from one side of westeros to the other side in season 7 + 8
