I think it's because he had a grandiose vision of how he wanted it to play out, and it all fell flat and didn't work. In season 1 he was busy filming World Peace 2 and left most of the production of Fish Tank up to Jet. But for this season he saw how big it could be and put in a lot more effort with a bigger production budget and everything. Then he had this whole storyline planned where he wanted to gaslight the characters into thinking they were all the main characters and everyone else was just actors, as well as the cult stuff in the attic, and it just didn't work out that way. Even with smaller bits like the hair cutting in the cell challenge he was visibly upset when things didn't go as planned. I think that's why he was going around punching holes into walls and breaking stuff every day. Then to top it all off, the same day Summer made the rape allegations he sperged out and made Trish cry from threatening to make her eat poo. He was totally deranged that night. Charls has mentioned in streams how hard of a guy Sam is to work with, I think it's clear that he's a control freak, and when things didn't go how he wanted this season he hated it. I think the only guy he liked was Greg
