Kid Cosmic is a good pick
Partial to Star Trk Prodigy by the fact that the sowrunners made an actual trek show.

Don't worry, regarding mainstream stuff there were very few good shows.

Damn, just a couple years shy of my favorite shows ever lol.
But yeah, I dunno, I guess Gumball was the one I enjoyed most from that point onwards. OH, it's a toddler show, but I actually found myself really enjoying TF: Rescue Bots. The characters are well-written, and it doesn't feel like the stereotypical toddler show that's talking down morals to you; it's just kinda wholesome and that's it.
If we're counting movies though, then easily Klaus.

Which ones?
TRON: Uprising is the immediate recommend; it's short, gorgeous, and mature. Easily one of my favorite cartoon shows.
After that, then it's Motorcity, Avengers: EMH, Scooby Doo: Mystery Incorporated, and Sym-Bionic Titan. Go a couple years earlier and you've also got Batman: Brave and the Bold, Spectacular Spider-Man, and Wolverine and the X-Men.
Beyond shows, the late2000s/early2010s was also home to some really fricking good DtV animated movies from DC and Marvel, though primarily DC. They're really great.
I liked Motorcity and I was kind of partial to Mystery Incorporated due to a lot of the main cast fitting character tropes that I really dislike, even though they got kind of better in the later episodes and Sym-Bionic Titan due to it actually ending that abruptly and not getting to the meat of the story. Btaman: Brave and the Bold was really really fun.

For Marvel, it's really just the Hulk Vs. duology and Planet Hulk, everything else is kinda trash sadly, lmao.
For DC, it's way harder because there's TONS. Not sure what I'd call the best, but I'd say everything from JL: The New Frontier to JL: The Flashpoint Paradox is at least worth watching; it's mostly not worth bothering with the movies after that, I think.

I really loved Rise of the Teenage Mutant Ninja Turtles (2018-2020) - gorgeous animation but it got cancelled way too soon
Lastman, easily.
I liked Invincible, it was fun.
Despite its flaws Infinity Train was really good. More importantly, watch all of Cartoon Saloon's movies. Make that your highest priority.
