The prop department gets a bit lazy sometimes like with the AK in OP's pic (random AK style rifle with some kind of a pipe put over where the bolt carrier used to be and a magazine meant to look like a space magazine) or Leia's blaster from the ANH (just a .22 starget pistol with random crap put over the barrel).
most of the prop guns that are “just guns” are from the first movie, where Lucas actually had a somewhat tight budget. Pretty much every weapon introduced after that is an intricate prop. There’s almost no guns in the prequels that are “just guns”. Even by ROTJ most new weapons were pretty elaborate props. That being said, gribblied out guns are kino. nah they didn't really start getting original gun designs until the prequels. Even so that tight budget still set an iconic aesthetic indicator for star wars, something that has been certainly ruined in the sequels but is still done just fine in the shows for the most part.
