Convergent evolution. The AK is just such a superior weapons design that pretty much every civilization which invents firearms will invent something identical to the AK-47.
There are lots of AK inspired designs that are more or less the same functionally but they still look drastically different

um ACTUALLY the original weapons were all kitbashed from real life guns so of course the ak47 could exist there!!

In all fairness all of Star Wars' blasters were based on real WWII era firearms, and it looks like they're going for a guerilla aesthetic here so the Kalashnikov is an apt weapon to use, but they didn't really dress it up at all.
Still, I'll take it over them spraypainting some convoluted hunk of PVC pipes and Nerf blasters because the writers think real guns are too problematic to show on screen.

That's not an AK-47, but it should be. Having a weapon that does not immediately give away your position by firing a big gay laser beam is a massive tactical advantage in a guerilla combat scenario
