It's just a generic "tough guy" job they could give her without much thought. It'd be weird imagining her having some kind of regular non combat focused job so she either goes back to professional earthbending or one of the new legal professions where she can beat people up, a cop or soldier. I would have preferred she just went back to wrestling as that'd be most in character for her but they wanted her to have some important political job so she could still have been relevant in the history of the show.
I feel like the obvious solution is to have her open her own dojo to teach her blindsight/metalbending to others, but maybe they were worried that it was a little too obvious. Worst comes to worst, you could probably just make her a White Lotus and tie her into everything that happens that way.

No fricking idea. After she gave up being a cop she went back to abandoning society and went to live in a swamp. Making her a cop made no sense. It would have made more sense if Lin rebelled by becoming a cop and had a fallout with her mom over becoming one.
