    The real answer was that he did not in the least bit care for authentic cooking, the main focus the movie is about. Linguini being the legal owner of his father's properties and business meant that he would be kicked out of all of that good old capitalism. Trying to hide the truth from Linguini about his biological father to capturing that fricking anthropomorphic rat to create a new line of frozen foods was all a part of that scheme.
