These background characters don't look uncanny to you? Their plastic skin shaders make them look more like mannequins than people and because they lack the exaggerated features Farquod and Fiona have they end up looking way less appealing.

It's a short film intended for a 4d theater, the quality isn't going to be that spectacularly when it's meant to be a short interactive experience that has to placate to in theater effects.
It's weird how Dreamworks didn't have a woman be one of the directors on this sequels, given one of their most notable traits is that they had woman directors, unlike Disney and Pixar (The Prince of Egypt, Shrek 1, Spirit and Shark Tale all had a woman among the directors). That would've given a more positive public image to a sequel which wasn't really needed.

One of the very few flaws Shrek 1 has is that the princess from the opening book doesn't resemble Fiona. Would've been better if she did.
We are shown what she looks like before the tower rescue scene, so there's no reason to have a different design for the opening book.
