i don't think the problem was that it was changed to modern audiences, i just think they didn't have a good idea of what they were doing with the setting and why. they clearly wanted the show to be a whimsical Adventure Time style generic fantasy but also wanted clear european mythical influence and those two things basically never worked together in unison at all.
It aged well because the sci-fi/concepts it parodied tended to be universal and ageless, rather than specific current events, and when it did work in current events you generally could still laugh even if you didn’t get the joke.
As an example, compare Godfellas to Susan Boil. In the latter, the joke is a reference to a 15 minutes of fame reality star who was already irrelevant as of the time it aired. You cannot watch it and miss the fact it was leaning entirely on a stale reference.
In Godfellas there were references galore, but the episode didn’t need you to understand them. Since they were done right, nobody who missed the references would know they’d done anything at all.

Boring setting. It absolutely should’ve been an adventure series akin to a DnD campaign rather than having everything center around this one town and its residents. It’s like Groening couldn’t get out of his Simpsons/Futurama mindset.
That being said, the writing was good and I enjoyed the characters. The main three are especially likable and play off each other well. It had potential to be a great show and I did enjoy it, but I fell off after the first season once I realized it would be just another take on Matt’s previous shows.
He had an idea of "Game of Thronesish plot + funny cartoon" but never bothered to think what the story was supposed to be leading to. So the plot you're supposed to be invested in had like 2 or 3 set ups and pay offs for characters you really don't care about.

Jon and Ygritte's depict what it's like when you're young and you have your first sexual romantic relationship. It's to show joy and happiness in their miserable lives, which is then makes it more tragic when she dies in their battle.
Jamie's depicts his complicated and diminishing relationship with Cersei, building to him finally leaving her.
Danny's show over the course of books her going from a shy object for Drogo to possess to a woman who is confident and in control. Eventually stops being something she allows men to do to her and becomes something she enjoys.
Cersei's shows her weird female misogynist mindset that was brought about by her bad relationship with her father.

Well, it's not like the books weren't already way behind chedule before that. But if that were true that would be sad. Boring setting. It absolutely should’ve been an adventure series akin to a DnD campaign rather than having everything center around this one town and its residents. It’s like Groening couldn’t get out of his Simpsons/Futurama mindset.
That being said, the writing was good and I enjoyed the characters. The main three are especially likable and play off each other well. It had potential to be a great show and I did enjoy it, but I fell off after the first season once I realized it would be just another take on Matt’s previous shows.

Tyrian's sex scenes developed his emotional dependence on Shae (and on rereads it's more apparent she's just using him) so you could feel the impact of her betrayal and his slip into villainy
Jon and Ygritte's depict what it's like when you're young and you have your first sexual romantic relationship. It's to show joy and happiness in their miserable lives, which is then makes it more tragic when she dies in their battle.
Jamie's depicts his complicated and diminishing relationship with Cersei, building to him finally leaving her.
Danny's show over the course of books her going from a shy object for Drogo to possess to a woman who is confident and in control. Eventually stops being something she allows men to do to her and becomes something she enjoys.
Cersei's shows her weird female misogynist mindset that was brought about by her bad relationship with her father.
I'm not saying he's perfect but of all the things to criticize, I'd say his sex scenes are waaaaaaaaaay better than most fantasy authors. Why do you feel otherwise?

Funnily enough Groening hinted a few times that it was building to "all just a dream" but evidently he got bullied out of that to the point wherein the last episode the characters snark about how dumb that would be as an ending.

They kept making mystery boxes without ever deciding what the payoff was going to be, so they just kept making meta jokes about it and hoping you don't notice that nothing has really resolved in a satisfying way.
The writers for this show can't be trusted with a cereal box, much less a multi-season arc.
To be fair, they were only doing plot in the season openers and finales for most of it.
They should have gotten people as much into medieval/fantasy lore to be writers as Futurama had sci-fi geeks.
Also the pacing was so abysmal it strangled every joke in the womb.

Elfo was just an even more emasculated male trope than Fry on Futurama, and it didn’t work out. The little demon dude voiced by the Black person was also underutilized. He should have been more edgy instead of just being Bart 2.0. Overall I think everything else about the series could have held up despite perfections if the main trio was 66% bad. Bender’s character was alright.
