He was the only reason she was still alive to that point, because he loved his daughter and refused to put her down solely because of the greyscale. In the show, where they made so many changes that went against how the characters were written it's not even funny. This event doesn't exist in the book series. It's a show invention. Stannis even leaves instruction to his men to support Shireen as queen if he's killed when he leaves Castle Black.
They couldn't even properly change Stannis. He felt all over the fricking place because the source material they had to follow is saying near-opposite shit to what they want to convey. That and their attempts to prop up Dany until they realized they were cornered into honoring the intended ending showed me just how easily tricked normalgays are when shitty creators make stories that lie to them. You can just play ominous or uplifting music and your average viewer will just agree with its intent.

They did this all through the life of the show from the beginning, making female characters like Catelyn look better than they were portrayed in the novels.

I felt like at that point they didn't know what to do with half the characters and the only thing George had to tell them was that Melisandre resurrected Jon. So they took Stannis out of the story to have one less plot thread to worry about and make the red woman a free agent. Nothing about Stannis' last few episodes makes any sense unless they were just trying to kill him off
