The Loeb and Kelly stuff is pretty good. Just avoid Byrne at all cost.

Byrne's "Man of Steel". Stop when it gets 'weird' though.
If you are just looking for good stories you can check out All Star Superman, Johns' Brainiac story; and Up Up and Away.

      Awful “jumping on” recommendation

What’s your argument for Byrne’s run being good or bad

There is genuinely no reasoning from people who say it’s bad. They just don’t like him.

The opening volume does a great job of showcasing his character and introduces the main cast in a fun way without requiring any prior knowledge.

Shit version of Luthor that turned him into a generic Trump stand in, made Lois into an utter b***h, tried to hard to be like Donnner by keeping the Kents alive which has had disastrous effects on Superman as a character, wrote Superman into being sort of a boy scout butthole yet also made Clark the most lifeless piece of shit boring good guy.

This reads like you haven’t actually read the run and are basing your opinions of it on a YouTube video you saw.

For All Seasons isn't a run but it's a great story that takes and easily understandable/digestible aspect of the character and tells it well.
Superman: Man of Tomorrow was a recent and short run that I think works quite well as an introduction. It doesn't hold your hand or bore you with history/lore/exposition, but gives you everything you need to know about Superman and Clark Kent, as well as a good deal of his cast of allies and villains, all in some entertaining, semi-episodic adventures.
Superman Adventures is based on the 90's cartoon but I think it would still work even if you haven't seen the show, and is a good 60+ issues in length so there's plenty of reading to be had.

Superman comics range from enjoyable to great in general. You actually have to try to make bad Superman comics like Bendis or that "5 years a slave" guy. Superman's main issue is that he's "Pepsi" to too many different hobbies "Coke".
