Like have Preston force Pacifica to help him kidnap Santa Claus to restore the Northwest wealth but it ends up unleashing Krampus on the town and Dipper and Mabel have to fix it.

Ideally, that's the direction I would have liked to have seen. Let the series go on hiatus after a one-off special or two, then gradually introduce a few new specials with the cast aged up a few years and dealing with that stage of life intermixed with mostly episodic adventures.
If it does well enough start building some new over-arcing story that isn't connected to Bill or his plans and see how Dipper and Mabel's teamwork and circle of friends face these new challenges from their more experienced mindset.
