OP asked for the most violent. Why would something cartoony discount its violence? That's an autistic level of restrictions that you're imposing on others.
Well I just said that Itchy & Scratchy is an easy winner if you count cartoons-within-a-cartoon since it's just one gruesome thing happening after another. The cartoons that it parodies like Tom & Jerry get up there if they're low-plot shorts. But they are too silly to be disturbing or leave any impact. I don't even think of some of them as violent at all.
Meanwhile the Animatrix disturbs me and feels violent in a way Bugs Bunny doesn't. What's your definition. Is Bluey violent? Some things have the parents throw their kids around or sit on them but they're cartoon dogs and it's harmless.

In a thread talking about characters being torn apart in gory detail, no I don't think a cartoon aimed at little children that manages to have some adult themes woven in is comparable. If you bash someone's head in with a rock, it's violence. Doesn't matter if it's cartoony or as realistic as possible. Maybe if OP was as specific as you're being then your comments would matter. Notice how everyone else is suggesting various violent cartoons and not being picky like you are.
Violence is pretty subjective, it can be measured by a lot of things like it's actual impact on the character's life, pain threshold, and most importantly perspective.

Depicting a nuclear bomb killing billions is technically immense level of violence, but shit like Elle getting her eyed plucked out and left to die in the desert in Kill Bill, Saw traps, getting melted by the Blob, etc. feel much more "violent".

The violence label is misapplied when in truth it should just be ahock content. Kaijus and giant robots levelling cities is colossal violence but its a thing that we see used as safe and charming action for all ages. Guys beating eachother up in a parking lot, punching teeth out, getting bruised, cut up and suffering nasty trauma is minimum scale but its visceral and real and it can shock and frighten people.
Planes crashing and buildings collapsed went from safe action to incredibly sensitive for a time after 9/11. It is all contextual and based on what could actually happen and how "real" it is.

There's gore but there's a lot of fricked up visual imagery in Metaloclypse. Sometimes it's not even real and just going with whatever music the band is playing. Other times it's really happening and people are dying during the performance.
