Watch the pilot and finale of VOY, nothing necessary happens in the middle because the finale is Janeway going back in time. Then the last episode of ENT just so your last scene of the Star Treks is with Riker. Then make a STO character and play the missions voiced by actors from the shows and create your own crew and canon.
Many may disagree but this is the optimal way to enjoy the franchise.

if a person watches star trek only for the canonical events in the timeline, they're better off watching a youtube video synopsis of the entire saga
You really need an watch guide for this show. There’s not really good and bad seasons; there’s just good and bad episodes. The quality ranges from some of the best writing in television history to absolute moronic 50’s drive in style Sci-Fi stupidity.
The first season is good, TNG is one of those shows where the bad episodes are still fun in a campy way, it's not like modern series where it's so bad it makes you want to have a nice day

I think season 1 is worth watching; but its a mixed bag. Season 2 is a mixed bag too; but its a better mixed bag. The season 2 premier sucks; but I really like the second episode Where Silence Has Lease and the rest of the season is at least decent with the exception of the clip show finale. So I'd say Season 2 episode 2 is when it gets good.
Season 3 is definitively a good season and that's the easy answer of when it gets good. I do think you should watch the series from the start of season 1 though, maybe skip a few of the lower rated clunkers on IMDB; but if you like the characters you'll enjoy season 1 even if it is kind of weak.
