Most of the ones in the British series were doomed anyway. Restaurants have the highest turnover of any business, most fail, and fail like the places he was visiting.
The one place that was around for 40 years and had and lost a star was a bummer. A restaurant that's been around 40 years is really, really, really fricking rare.

the point of the series isn't really to "save" failing restaurants, they are usually too much in the red to stay in the business anyway, or have a competitor taking away their customers. The point of Kitchen Nightmares is usually just to help owners get out of debt as much as possible and then sell their place with some profit- which happens most of the time for the restaurants in the series. But that explanation is too complex for average viewer, so simple "saving restaurants" is used as a draw instead.
