Thinking you are on the right side of something because of “tradition”, is the most moronic basis for thinking you are right about anything. Also, picking raw fish, to be THIS religious about, is fricking stupid as frick. The amount of time and industry that goes into something like your car, your home, etc, far surpasses some idiot wasting his time, cutting fish, and never learning how to cook.       You forgot the part where they are paying thousands of dollars to eat this particular chefs food of which there are ~10 seats in New York City.
