I feel like Eric Andre's show is like reality TV. With reality TV, the crew does little things behind the scenes to stress (certain) cast members to make them act more crazy during filming. This makes the show better.
I would guess Chet was being fricked with by crew members - they spilled stuff on him, or messed up his hair, or wouldn't let him smoke weed - and he just reacted during filming by riding the dirt bike.
