But if a character's sex or ethnicity has no bearing on a story, you can change it, either to add texture to the character or just to add some color to your cast.
In western media, white men have been used as the default
setting for characters not affected by their sex or ethnicity, so it is often easy to change from that. On the otherhand, non-white and non-male is usually an integral part of the character's role in the story, so it cannot be changed easily.
Tony Soprano is an Italian-American man by character, so you cannot cast an Indian woman in that role. Legolas on the other hand is a member of a fantasy race, and since there is no concept of how skin color or gender affects his character, you can change it however you like.
