I think a big part of it is simply Maxwell Adams gradually changing his preferred way of drawing certain characters as the show went on.
Other subtle parts of the show's visual style changed over time as well.
The artstyle definitely became a lot more compacted. Hoss Delgato is another one who changed a lot. His Underfist design contrasts a lot against him in the early seasons.
I always liked how the Billy & Mandy Universe included all sorts of supernatural and God beings walking around as mostly neutral actors. Eris should've kept her valley girl accent and style though
