Why did Vegeta become a different character after Namek?

On Namek, he was sneaky, pragmatic, and had no qualms about fighting dirty. Didn't mind teaming up with others if it meant getting closer to his goals -- a shrewd opportunist who always kept his eyes on the prize and played the long game. After Namek, however, he suddenly believes in honor/"a warrior's code" and denounces the very idea of receiving help. If his strength alone isn't enough to solve a problem, then he'd rather die. He is defined solely by pride and hubris.

              They use Chinese characters, which each mean a whole word and there are tens of thousands of them with very high complexity to distinguish between them, but these are terrible for writing Japanese because, unlike Chinese, they use inflectional morphology in their grammar (IE changing a verb to make it past tense instead of adding a word for the past tense)
              So on top of that they use two separate syllabaries which have a character for each possible syllable in Japanese. So ベ = be ジ = ji タ = ta
              Overall, it's a shit show

                I don't know what you mean by easiest form, they display the syllables next to any Chinese characters so you don't need to know thousands of them to read it, but a lot of manga do that. DB is pretty easy to read but that's because they aren't exactly discussing philosophy.

                You misunderstand. Japanese language by default doesn't have what we english speakers know as the 've/vii' sound, so for them, words like veggies gets transcribed as 'begi'.

                Similar deal. They don't have the 'li' and 'ri' sound as english speakers know it. So both gets rendered to エアリス e-a-ri-su.
                The 'ri/li' sound in らりるれろ is actually sort of an in-between.

                I can only speak for Kara no Kyoukai as it's the only Nasu work I've read from start to finish. Using the first volume as an example, in terms of vocabularies sometimes Nasu uses unusual kanjis of a common word to prove a point (or having the ruby characters which mean something different on top of a word -- e.g the ruby for 剛い reads as "kowai" (scary) while the actual kanji itself means "tough"). Prose-wise he has is own "Nasu"-way of writing:
                - Incomplete sentences (e.g そして貌の亡い、つぶれた顔; this is also an example where he uses 2 different readings of 顔/face to prove a point (貌 means "looks on someone's face", 顔 means "the physical face") -- 貌の亡い = "X looks like it's dead"; つぶれた顔 = "smashed face". Combined together you can get, "A crushed face that contains no sign of life.")
                - Weird ways of phrasing things (this could very be my inexperience with a wide variety of Japanese literature)
                - Plenty of abstract metaphors, philosophical rambling, or even oddly specific technical ideas (this is mostly for the tidbits on Fujino's medical condition). Example: 眠り(ヒュプノス)は、やはり現実(タナトス)となる事で還る事になったのだろう

    Maybe because he saw Goku do that very same thing. He saw Goku solve his problems with his own strength then go on to become the first Super Saiyan and beat Frieza, something he thought impossible most of his life. Vegeta must have decided there was something to it.

    It's called character development and the same transition started in the previous saga. Basically him being humbled (though not admitting it) by gokus superiority and realising that these new people in his life aren't so bad. He was increasingly realising he could work with the z team and he was finally seeing actual evil in the universe and realising that evil is cringe (although it's still in his nature)
