i mean it was a joke in the episode, but.. both in censored settings and real life, the right thing to do in this situation is subdue and restrain (for later trial). and with bending, you're in great shape with that. In fact, in the end, that is what Aang did. He earthbent rock around Ozai's hands and he was defeated. It's also what Katara did to Azula. Once someone's restrained, you put them in prison. not sure how you could imprison a firebender, icy cell or whatever? but it's worth a shot. it's not like Ozai's gonna be able to take over the world on his own. he'd forever be that defeated guy that got handcuffed and tossed in the chill by a kid.

It wouldn't have been as interesting that way, the ending of a show needs something big and climatic, and Aang just deciding to cripple Ozai would be very anti climatic. Also Nickelodeon probably would have seen that as too violent.
I don't have much of a problem with the energy bending in ATLA.
Sure it would have been better if Aang found a way to deal with Ozai himself rather than having it being basically given to him, and it would have came out of nowhere less if it was set up.
But it does look cool.
