the idea of the force isn't that the force users directly influence events but rather they sense the flow of the moment. that's why they can deflect blaster shots, because they can sense the flow of where shots will be as if they were feeling the current of a river and swimming with it.
"jedi mind tricks" suggested the jedi could use the force to directly influence the minds of others. the mind-reading thing would have made a lot more sense if she was using "mind control" to force them to tell her things, as opposed to her reading their thoughts directly.
