I was at an anime convention like 7 years ago and some guy wrote down a youtube channel that had like all the Gundam episodes and all the iterations on a piece of paper and gave it to me. I never ended up getting into it because I didn't know where the frick to start.
It's really not hard to start. Most of the main shows take place in their own self-contained universe. The original series and its sequels are known as the Universal Century. That's probably the hardest to get into. Shows like Wing, G Gundam, IBO, 00 and SEED are all self-contained, with some follow ups of their own.

The modern day list looks something like this, just pick a timeline and watch whatever
The idea that each of those logos has potentially hundreds of individual episodes is making me deeply uncomfortable. Someone needs to tell those asians to calm down.
I would like to add that it would be better to watch Universal Century in release order. The important entries are the ones created by Tomino. The 90s OVAs are side-stories. The Origin is an adaptation of an arc from the manga retelling of the first Gundam and it's not canon to the anime. The entries made by Fukui are fanfiction.

It was good for the time. Still solid today but 00 gundam is basically a direct upgrade of wing and one of the best gundam series.

I loved War in the Pocket. I watched Wing first, but War in the Pocket made me love Gundam as a concept
Especially having first watched it as a kid and being able to heavily identify with it and feeling a great deal of sadness at the end
