The funny thing is that the idea of "representation in media is important" isn't even a concept that started with fiction studies, it's actually meant to apply to news coverage and documentaries. You know, the aspect of media which is actually supposed to be taken seriously as a depiction of reality? For whatever reason, this concept ended up being conflated with how fiction media should be made, even if everyone knows fiction is inherently bullshit and don't really care how it represents reality, because it doesn't by definition.
As for self insertion. Maybe someone out there can only do it if the characters "look like them" or something stupid like that, but you'd have to be extremely self-centered to only be able to identify with fictional characters and as I already mentioned, you inherently know fiction to be bullshit, very few people are incapable of telling cartoon isn't real.
Finally, as for the specific example of Dragon Ball being more popular than Coco and Encanto... Because Dragon Ball is cool? If we assume the audience only watch it to imagine themselves as the characters (which I'm not entirely sure is the case) it's way more appealing to self-insert as a planet busting martial artists who can literally learn superpowers, than some randoms who speak spanglish and maybe have a similar skin tone to yourself.
