Because the Gundam is a pop culture symbol in japan. It's like their Star Wars. And besides, like other anons said here, not every Gundam is a perfect replica of Grandpa's face. For example, the Xi Gundam's face (at least in the movies, the original face of it in the novel is a bit more conventional), or the G-Self and the aforementioned Barbatos and Turn A.
MAYBE the God and Burning and the F91 and Crossbone could count, given how their faceplates work?

But that's not true at all? Maybe if it was before 2000, but almost all the Gundams starting with Turn A and SEED have such varied faces.
Literally all the Gundams from IBO except Barbatos don't have the normal 2 vent RX78 face, all the Thrones, and Arche, Reborns, Lightning, Gundam MKIII/Tertium, G-Self, G-Lucifer, G-Arcane, Lfrith and its variants, Aerial, Calibarn, Pharact, Kyrios, Abyss, Virtue, Dynames, Exia,Strike Noir, Aegis,Justice, I justice, Destiny Gp02a, Delta Gundam, Delta Gundam Kai, Blitz, Buster, Duel, Calamity, Age-2, Raider, Exia, Qan[t], 00 Sky, Turn A, Shining, Gundam MK V, S/EX-S, Alus Core, this goes on and on.
